Mussels, fried and then marinated in olive oil, wine vinegar, garlic, bay leaf and spices. Plump and tender, in a sharp, aromatic marinade.
Made for JOSE Gourmet, in the escabeche style of preserving with vinegar and oil.
Serve with bread and a cold drink, or stir into a potato salad with red onion.
